The Perfect Healthy Sheera Recipe

This recipe is simple, quick, and yields a Sheera that is fragrant, perfectly sweet, and incredibly satisfying.

Ingredients:

  • ½ cup Semolina (Suji/Rava)

  • ⅓ cup Satv Dairy A2 Cow Ghee

  • ½ cup Satv Dairy Desi Khand (you can adjust this to your preferred sweetness)

  • 2 cups Water or Milk (for a richer taste, use whole milk)

  • A pinch of Cardamom (Elaichi) powder

  • 10-12 Almonds or Cashews, slivered or chopped

  • A few strands of Saffron (Kesar), soaked in 2 tablespoons of warm milk (optional)

Instructions:

  1. Roast the Semolina: In a heavy-bottomed pan or kadai, heat the A2 cow ghee over a low to medium flame. Once it’s melted and fragrant, add the semolina.

  2. Stir continuously and roast the semolina for about 8-10 minutes. This step is crucial! You’re looking for a light golden color and a beautiful, nutty aroma to fill your kitchen. Don’t rush this part.

  3. Prepare the Sweet Liquid: While the semolina is roasting, heat the water or milk in a separate saucepan. Add the Desi Khand and the cardamom powder, and stir until the khand dissolves completely. Bring the mixture to a gentle boil and then turn off the heat.

  4. Combine with Care: Once the semolina is perfectly roasted, turn the heat down to the absolute lowest. Carefully and slowly pour the hot, sweet liquid into the semolina. Be cautious as the mixture will bubble and steam up vigorously.

  5. Cook to Perfection: Whisk continuously as you pour to prevent any lumps from forming. The semolina will absorb the liquid very quickly.

  6. Once all the liquid is added, stir the mixture well. If you’re using saffron, add the saffron-infused milk now.

  7. Cover the pan with a lid and let the Sheera cook on low heat for 2-3 minutes, allowing it to steam and become fluffy.

  8. Garnish and Serve: Turn off the heat. Open the lid, add the chopped nuts, and give it one final, gentle stir. The ghee will start to separate from the sides, a sign of a perfectly cooked Sheera!
