Chances are you have passed through a health food aisle recently to find a reference to what is known as A2 Ghee, everywhere. It is touted as a golden elixir, a super food. So what is the truth behind it? Is it smart marketing, or is there really something different about it?

Exactly, what is A2 Ghee? Science in the Purity
The big deal with A2 ghee is not a complex equation; rather, it is extremely simple. The whole story lies in the cows.
Milk, as it happens, contains a protein known as casein, and there are two principal variants of this protein: A1 and A2.
A2 Beta-Casein: You can imagine this as the old world milk protein. It is produced using our indigenous Indian (desi) cow breeds such as Gir and the Sahiwal. We are familiar with this protein in our bodies because it has been circulating in our bodies for centuries and it is very closely related to the breast milk of a human mother which has caused it to be extremely easy to digest by our bodies.
A1 Beta-Casein: This is a very recent protein which emerged as a result of gene mutation among most European cow breeds. Digestion of this A1 protein may cause problems in some individuals. It is capable of releasing a peptide known as BCM-7 attributed to that uncomfortable feeling of bloating and inflammation.
Therefore, A2 cow ghee is nothing but ghee manufactured using milk of desi cows that only naturally produce A2 protein. It is not a new invention but it is back to the pure, gentle food our ancestors lived.
Art of ghee-making Why Bilona is important
The process of making the actual A2 ghee cannot be hurried up. It is an art ware, a heritage we love. We apply Vedic Bilona process, a labor-intensive, 3-day process that makes sure that each drop of ghee is as healthy as possible.
It is quite different to the speed of the machines in commercial dairies. This is the way we accomplish it:
Milk to curd: we take fresh, pure A2 milk and boil it lazily and cool. Next, we stir in a bit of starter culture and leave it to set overnight so that the milk is turned into probiotic rich curd.
The Rhythmic Churn: This is magic. The curd is put in a basic earthen pot. In a wooden churner known as a bilona we gradually churn the curd in opposite ways. The process of separating the butter (makkhan) and buttermilk (chaas) is brought very slowly by this patient beat.
Golden Finish: Our makkhan thus procured is now placed into a heavy bottomed pot and heated on a slow fire. The water boils off and the milk solids begin to caramelize, settling at the bottom leaving pure, aromatic, liquid gold when the milk reaches the desired temperature.
It is like this painstakingly gradual thing that is a labour of love. It is what makes our ghee smell so magnificent, having a granular consistency and nutritional value which can not be achieved by industrial processing.
