As the curd churns, butter rises naturally and gets separated. What remains is pure, traditional chaas what many also call chhach, mattha, or chhas depending on where you're from.

  3. Slow churning - The Bilona method, The curd is churned slowly using the traditional Bilona technique. This is the part that most commercial brands skip entirely because it takes time. We don't skip it.
  4. Butter rises and separates naturally. As the churning continues, white butter rises to the surface and is lifted off. What remains below is the real thing traditional mattha made from A2 desi cow curd.
  5. Packed in glass and delivered fresh. The fresh bilona chaas is bottled in reusable glass bottles and sent out for same-day delivery across Delhi NCR. No storage, no processing after bottling.
HOW TO USE HOW TO USE
  • The most natural use is exactly what your family probably already knows,
  • A glass of chilled chaas after lunch. With this one, it actually lives up to what that's supposed to feel like: light, cooling, and settling on the stomach in a way that packaged chaas just doesn't.
  • You can drink it plain, or add a pinch of roasted jeera, black salt, or fresh mint if you like. Both work. A lot of people find plain chaas tastes better here because the sourness is already well-balanced from the curd itself, it doesn't need masking.
  • In summer months, this is especially good chilled right out of the fridge. Works well as a cooling drink after meals, a light mid-day pick-me-up, or alongside a proper Indian thali lunch.

1. What exactly is Bilona Buttermilk and how is it different from regular chaas?

  • Bilona buttermilk also called chaas, chhach, mattha, or chhas depending on the region, is made by churning curd until butter rises and separates naturally. What remains after the butter is removed is traditional buttermilk. Regular commercial chaas is usually just diluted curd or acidified milk, the butter is never actually separated because that step is skipped entirely. The Bilona method is slower and less efficient for mass production, which is exactly why most brands don't do it. We do.

2. Is this the same thing as chaas, chhach, or mattha?

  • Yes same product, different names by region. In North India it's commonly called chaas or chhach. In other parts it's known as mattha or chhas. All refer to the same traditional buttermilk made from churned curd. Ours is made specifically using the Bilona method from A2 desi cow milk.

3. Does Bilona A2 buttermilk actually help with digestion?

  • It's been used as a post-meal digestive drink in Indian households for a very long time and there's good reason for it. It's light, it contains live cultures from the curd it's made from, and the A2 beta-casein protein base is already easier on the digestive system than regular milk. It won't replace medical treatment for any condition, but as a daily drink after meals, it genuinely works for most people.

4. Why does the buttermilk sometimes separate in the bottle?

  • Because there are no stabilizers or thickeners. Real chaas made from churned curd will naturally separate on standing, the lighter liquid rises while some solids settle. This is completely normal and is actually a sign the product is genuine. Just shake the bottle gently before pouring. If a chaas never separates, it almost certainly has stabilizers in it.

5. Is this made from your own farm's milk or sourced from outside?

  • Only our own farm. Gir, Sahiwal, and Haryana cows that we raise ourselves on Satv Dairy's farm in Delhi NCR. The milk is turned into curd and churned fresh. No outside milk enters the process at any stage. Every bottle is fully traceable to our own herd.

6. Does it contain preservatives, stabilizers, or artificial flavour?

  • None of those. The ingredient list is one item: A2 cow milk curd. That's it. No preservatives, no artificial sour flavour, no thickeners, no milk powder, no synthetic anything. The shelf life is naturally shorter because of this, which is also why we deliver it fresh and recommend consuming it within 3 days.

7. Can I add spices or seasoning to it?

  • Absolutely. A pinch of roasted jeera powder, black salt, and fresh mint is the classic way to serve it. Some people add ginger or a small green chilli. You can also drink it completely plain, the sourness from genuine churned curd is well-balanced enough that it doesn't need anything added. Try it plain first, then season if you prefer.

8. How long does it stay fresh and how should I store it?

  • Keep it refrigerated below 4°C as soon as it arrives. It stays fresh for up to 3 days. Since there are no preservatives, don't leave it out at room temperature. Shake gently before serving. Use a clean glass  don't drink directly from the bottle to avoid contamination.
